Leftover Pasta Salad
Ingredients:
4 cups leftover cooked pasta
2 cups leftover cooked chicken, salmon or prepackaged “krab”
1 cup salad dressing of your choice
2 cups of chopped vegetables, such as celery, onion, bell pepper, carrot, tomato
Lettuce leaves to line the plate
Crumbled feta or grated cheese (optional)
1-2 tsp. salt
Chopped fresh herbs to garnish, such as basil, parsley, cilantro
Process:
1. Chop your vegetables and place them in a large bowl.
2. Add the salad dressing and toss.
3. Add the protein and toss.
4. If desired, add cheese and toss.
5. Taste, then add some salt if desired.
6. Line each plate with some lettuce leaves.
7. Put a big scoop of the pasta salad on each plate.
8. Garnish with a sprinkling of herbs.
